Mais dans l\u2019ombre de la brasserie de Saignel\u00e9gier se cachent d\u2019autres artisans du malt et du houblon encore m\u00e9connus des palais romands. Black Pig en fait partie.<\/strong><\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Passionn\u00e9 de bi\u00e8res et au point mort dans son m\u00e9tier dans l\u2019\u00e9lectronique, Ben s\u2019est lanc\u00e9 un challenge: ouvrir (et faire tourner) sa propre brasserie, en donnant la priorit\u00e9 au march\u00e9 local. La brasserie, d\u00e9marr\u00e9e en 2015 dans son garage \u00e0 Courroux, propose un <a href=\"https:\/\/www.blackpig.ch\/shop\/\">assortiment de base<\/a>&nbsp;de quatre bi\u00e8res, qui se veulent taill\u00e9es pour les n\u00e9ophytes comme pour les vrais beergeeks.<\/p>\n\n\n\n<p>La <em>Pi-Pig<\/em> (Summer ale \u00e0 4.6%, bi\u00e8re de soif au go\u00fbt subtilement citronn\u00e9) et la <em>Uto-Pig<\/em> (American wheat beer \u00e0 4.5%, blanche l\u00e9g\u00e8re) s\u2019adressent plut\u00f4t au grand public, alors que la <em>Pig-Ale<\/em> (APA \u00e0 5.2%, aux houblons rappelant les tropiques, attention \u00e0 la prononciation&nbsp;!) et la <em>Pig-Up<\/em> (American IPA \u00e0 6.1%, avec une bonne amertume et de l&#8217;agrume) visent les initi\u00e9s.<\/p>\n\n\n\n\n\n<p>A l\u2019heure actuelle, la brasserie est en plein d\u00e9veloppement. L\u2019an dernier, Ben est rejoint par Christophe, son \u00abfr\u00e8re siamois\u00bb (tout le monde les confond), cuisinier de m\u00e9tier. Avant de prendre leur envol et partir \u00e0 la conqu\u00eate d\u2019autres territoires romands, les deux associ\u00e9s veulent d\u2019abord trouver leur \u00e9quilibre et abreuver les Jurassiens avec leurs bi\u00e8res fortes en go\u00fbt, d\u00e9mocratiser la bi\u00e8re artisanale dans une contr\u00e9e longtemps \u00abdomin\u00e9e par la culture Wartech\u00bb.<\/p>\n\n\n\n<p>L\u2019ann\u00e9e prochaine, ils ont pour projet d\u2019ouvrir une <em>taproom<\/em> et d\u2019acqu\u00e9rir des locaux de brassage <em>in situ<\/em>. Car pour l\u2019instant, le garage ne suffisant plus \u00e0 satisfaire leur soif d\u2019exp\u00e9riences, les deux apprentis brasseurs (<em>sic<\/em>) fa\u00e7onnent leurs cr\u00e9ations houblonn\u00e9es dans les cuves de la N\u00e9buleuse, \u00e0 Renens. Dans le jargon, on parle de \u00ab&nbsp;<em>gypsy<\/em>&nbsp;\u00bb. A la base destin\u00e9e \u00e0 \u00eatre un hybride bi\u00e8re-mojito \u00e0 m\u00e9langer avec un sirop de menthe maison, les brasseurs se sont rendus compte que la bi\u00e8re \u00e9tait bien meilleure\u2026 sans la menthe. Avec leurs camarades de la <a href=\"https:\/\/leregardlibre.com\/2018\/10\/05\/la-blz-company-le-succes-au-parfum-local\/\">BLZ Company<\/a>, bas\u00e9s \u00e0 Orvin dans le Jura bernois \u2013 dans le contexte politique \u00e9lectrique actuel autour de la question jurassienne, cela les fait d\u2019ailleurs bien sourire \u2013&nbsp;les deux acolytes ont \u00e9labor\u00e9 une bi\u00e8re fum\u00e9e au cumin et \u00e0 la choucroute, la Yadl\u2019Ajoie.<\/p>\n\n\n\n<p>L\u00e9g\u00e8re en bouche, leur derni\u00e8re cr\u00e9ation est parfaite pour accompagner un bon plat \u00e0 base de porc. Cela tombe bien, ce week-end c\u2019est la Saint-Martin. Si vous vous d\u00e9placez dans le Jura pour l\u2019occasion, n\u2019oubliez pas d\u2019aller jeter un coup d\u2019\u0153il \u00e0 leur stand sur le <a href=\"https:\/\/www.facebook.com\/events\/2241958659403832\/\">march\u00e9 \u00e0 Porrentruy<\/a> pour la go\u00fbter.
