Et autant vous dire que \u00e7a claque. Surtout quand c&#8217;est son directeur Reto Engler qui nous fait visiter son industrie, tout en r\u00e9pondant \u00e0 nos questions indiscr\u00e8tes.<\/strong><\/p>\n\n\n\n<!--more Lire la chronique-->\n\n\n\n<p>Imaginez. Vous sortez du train Lausanne-Puidoux, offrant d&#8217;excellentes vues sur le L\u00e9man et ses rives enchanteresses. Vous regardez votre iPhone pour vous aiguiller vers votre destination. Direction la zone industrielle. Soit! Le p\u00e9riple n&#8217;est pas long, mais la temp\u00e9rature est si haute quand vous en venez d\u00e9j\u00e0 \u00e0 r\u00eaver des potentielles d\u00e9gustations \u00e0 venir. Travail oblige. Alors vous arrivez \u00e0 un carrefour et un panneau vous fait tourner la t\u00eate \u2013 autant que le soleil \u2013 vers ce qui ne peut plus qu&#8217;\u00eatre \u00e7a vu que c&#8217;est \u00e9crit en tr\u00e8s, tr\u00e8s grand: la brasserie vaudoise du <a href=\"https:\/\/www.docteurgabs.ch\/\">Docteur Gab&#8217;s<\/a>.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/leregardlibre.com\/wp-content\/uploads\/2019\/07\/IMG_4810-scaled.jpg\" alt=\"\" class=\"wp-image-22568\"\/><figcaption>Une brasserie artisanale qui en veut. \u00a9 Jonas Follonier pour Le Regard Libre<\/figcaption><\/figure>\n\n\n\n<p>Nous nous annon\u00e7ons et sommes bient\u00f4t accueillis par Reto Engler, directeur en op\u00e9rations et un des trois fondateurs associ\u00e9s de la brasserie. Ce sont des locaux repr\u00e9sentant 3&#8217;000 m\u00e8tres carr\u00e9s que nous fait visiter le jeune directeur. <em>\u00abLe double de ce que nous avions avant \u00e0 Savigny\u00bb<\/em>, nous informe Reto. <em>\u00abSurtout, la situation est id\u00e9ale: nous nous trouvons \u00e0 c\u00f4t\u00e9 de l&#8217;autoroute, il y a des quais de chargement et des stations couvertes pour les v\u00e9hicules.\u00bb<\/em> L&#8217;agrandissement, c&#8217;est la grande constante de l&#8217;entreprise. En termes de litres, c&#8217;est assez impressionnant: 40&#8217;000 litres vendus dans les ann\u00e9es 2010, un million en 2018&#8230; et un million et demi de pr\u00e9vus pour 2019.<\/p>\n\n\n\n<p>D\u00e9but\u00e9e par Gabriel Hasler, David Paraskevopoulos et Reto Engler comme activit\u00e9 accessoire \u00e0 c\u00f4t\u00e9 du gymnase ou de l&#8217;apprentissage, Docteur Gab&#8217;s repr\u00e9sente aujourd&#8217;hui leur activit\u00e9 principale et d\u00e9passe les 100% de travail pour les trois associ\u00e9s. Au total, ce sont trente-cinq personnes qui sont employ\u00e9es dans la soci\u00e9t\u00e9, vingt-cinq \u00e9quivalents temps plein. Peut-on \u00e0 ce stade encore parler de microbrasserie et m\u00eame de brasserie artisanale? <em>\u00abOui, dans la mesure o\u00f9 l&#8217;artisanal n&#8217;est pas qu&#8217;une affaire de quantit\u00e9, mais surtout de qualit\u00e9 et de mentalit\u00e9\u00bb<\/em>, me r\u00e9pond sereinement notre interlocuteur du jour. <em>\u00abLa brasserie Brooklyn aux USA est plus grande que Feldschl\u00f6sschen, et pourtant son mode de fabrication se rapproche plus de l&#8217;artisanal. De plus, ce qui est essentiel, c&#8217;est l&#8217;ind\u00e9pendance de la marque.\u00bb<\/em><\/p>\n\n\n\n<p>Un diff\u00e9rence de nature plus que de degr\u00e9, donc. En parlant de degr\u00e9s, les bi\u00e8res de Docteur Gab&#8217;s ne suivent pas forc\u00e9ment la mode du moment, qui voudrait qu&#8217;on fasse presque seulement des IPA ou des bi\u00e8res acides. Le moins qu&#8217;on puisse dire, c&#8217;est que le brasserie propose un large panel de mousses allant de la bi\u00e8re de soif \u2013 la fameuse \u00abSwaf\u00bb \u00e0 4,8%, <em>\u00abpas si facile \u00e0 faire\u00bb<\/em> \u2013 \u00e0 la bi\u00e8re ambr\u00e9e \u2013 la d\u00e9nomm\u00e9e \u00abChameau\u00bb \u00e0 7%&nbsp;\u2013 en passant par une blanche \u2013 la traditionnelle \u00abHouleuse\u00bb \u00e0 4,8% \u2013 ou une triple blonde \u00e0 8% (bon \u00e0 savoir avant de la boire), la \u00abTemp\u00eate\u00bb.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/leregardlibre.com\/wp-content\/uploads\/2019\/07\/IMG_4814-scaled.jpg\" alt=\"\" class=\"wp-image-22569\"\/><figcaption>Les cuves estivale et hivernale de la brasserie du Docteur Gab&#8217;s, qui changent d\u00e9sormais chaque ann\u00e9e de composition. Nous approuvons les actuelles! \u00a9 Jonas Follonier pour Le Regard Libre<\/figcaption><\/figure>\n\n\n\n<p>Docteur Gab&#8217;s s&#8217;est m\u00eame lanc\u00e9 dans le cidre, obtenant un certain succ\u00e8s. Les caisses de crafty sont d&#8217;ailleurs d\u00e9j\u00e0 pass\u00e9es par <em>Le Regard Libre<\/em> avant que nous nous y int\u00e9ressions dans le cadre de cette rubrique. C&#8217;est un cidre fort agr\u00e9able et r\u00e9ussi, rien \u00e0 dire de plus. Et il est vrai que si l&#8217;on fait du jus de pomme suisse en grandes quantit\u00e9s avec nos bons fruits, alors pourquoi pas fabriquer du cidre helv\u00e9tique au lieu de le faire importer de Normandie? Reto nous pr\u00e9sente \u00e9galement la nouvelle collaboration de Docteur Gab&#8217;s avec la r\u00e9put\u00e9e \u00abBlanche de Namur\u00bb, ainsi qu&#8217;un partenariat sous forme de processus collaboratif avec QoQa.
