{"id":10997,"date":"2017-08-28T13:34:29","date_gmt":"2017-08-28T11:34:29","guid":{"rendered":"http:\/\/leregardlibre.com\/?p=10997"},"modified":"2022-09-04T10:13:24","modified_gmt":"2022-09-04T08:13:24","slug":"insects-on-the-plate","status":"publish","type":"post","link":"https:\/\/leregardlibre.com\/en\/gastronomie\/des-insectes-dans-lassiette\/","title":{"rendered":"Des insectes dans l&rsquo;assiette?"},"content":{"rendered":"<p class=\"wp-block-paragraph\"><em>A look at the news - H\u00e9l\u00e8ne Lavoyer<\/em><\/p>\n\n\n\n<p class=\"has-drop-cap wp-block-paragraph\">This week, a very Swiss event managed not to be overshadowed by the sad news from Barcelona and the Trumpian adventures: the announcement of the start of steaks... of crickets, worms and locusts. \u00abGross!.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At the barbecue, vegetarians and omnivores spiced up the debate. On one side, there are the \u00abproponents\u00bb, on the other, the repugs. It's understandable that worms, which are avoided and are more likely to rot, are disgusting. Locusts and crickets, on the other hand, belong in a field.<\/p>\n\n\n\n<!--more Lire la suite (en libre acc\u00e8s)-->\n\n\n\n<p class=\"wp-block-paragraph\">So much information is circulating about insect or worm-based foods that it's hard to know anything about this diet known as \u00abentomophagy\u00bb. It's believed that they contain more protein for the same amount of food, that worms will save the world from famine, or that certain economic and environmental concerns will be lightened thanks to these disgusting bugs. Is this convincing information true? Two billion people have made them the staple of their diet. Can they be wrong?<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">The solution we've been waiting for?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">L\u2019Organisation pour l&rsquo;alimentation et l\u2019agriculture (Food and Agriculture Organization) a rendu public un dossier dans lequel il est question non seulement des avantages de manger des insectes, mais \u00e9galement des raisons pour lesquelles cela semble \u00eatre \u00abla\u00bb solution.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Par exemple, la consommation de viande et de poisson \u2013 sources principales de prot\u00e9ines pour beaucoup de personnes \u2013 n&rsquo;a cess\u00e9 de cro\u00eetre au cours des derni\u00e8res d\u00e9cennies, \u00e0 tel point que la question se pose aujourd\u2019hui: comment r\u00e9pondre \u00e0 cette demande? De plus, le co\u00fbt environnemental de ces types de production est gigantesque. La FAO a plac\u00e9 les insectes dans la liste des aliments qui pourraient bien aider \u00e0 annihiler ces probl\u00e8mes, parmi pois, algues, champignons et m\u00eame viande \u00abin vitro\u00bb.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">A European first<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Yet the food revolution, which is trying to get off the ground, is struggling (yes, because \u00abit's gross\u00bb) to create a good following. Switzerland is therefore the first European country to make such ideas available to the public, and despite the sales authorization received in May 2017, it's not until August 21 that Coop has made up its mind. Migros, meanwhile, has yet to make any concrete use of the channel. This is to be expected, given the surveys conducted by the Bern University of Applied Sciences (BFH), in which fewer than 10% of Swiss say they'd be willing to give it a try, although 32% are \u00abnot fundamentally opposed\u00bb to trying it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fortunately, because we've all eaten insects, at least indirectly. Check whether your food contains the food additive E120. Discreet, but very present - in Campari, certain yogurts and M&amp;M's, for example - this coloring agent is made from cochineal, an arthropod native to South America. Some sources report, however, that it is possible to chemically recreate the color produced by dactylopius coccus.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Health first<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">As disgusting as they are, insects are actually packed with nutrients essential to human beings; their protein and mineral content is high, and some species are a good source of healthy fats. Our hated creatures also contain good quantities of iron and zinc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Et lorsqu\u2019il est question de sant\u00e9, c\u2019est aussi d\u2019hygi\u00e8ne qu\u2019il faut parler. Si l\u2019\u00e9levage intensif comme pratiqu\u00e9 de nos jours pr\u00e9sente des risques de zoonoses \u2013 des infections transmises d\u2019animal \u00e0 humain, comme la grippe aviaire, la maladie de Lyme et m\u00eame Ebola \u2013, ils sont plus faibles dans les \u00e9levages d\u2019insectes. La plus grande attention doit \u00eatre port\u00e9e au nettoyage de l&rsquo;environnement dans lequel l&rsquo;\u00e9levage \u00e9volue. Il s&rsquo;agit par exemple de mettre en place des cages \u00e0 trous, par lesquels passent les d\u00e9jections animales afin qu&rsquo;ils ne s&rsquo;en nourrissent pas, et de vider, d\u00e9sinfecter, replacer le bac o\u00f9 elles se sont d\u00e9pos\u00e9es. Les aliments doivent \u00e9galement attirer l&rsquo;oeil attentif de l&rsquo;\u00e9leveur: pas question de laisser pourrir quoi que ce soit.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">A response to environmental concerns<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Here's the number: eight kilos. That's the amount of food needed to produce just one kilo of beef, whereas only two kilos are needed to harvest one kilo of insect meat. In fact, insects are the \u00abperfect children\u00bb of the animal world, because they love almost any kind of food. Goodbye forages, supplements, soy and grass crops! Insects are satisfied with organic waste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A positive balance sheet, too, in terms of water consumption and greenhouse gas emissions. The figures on this subject are staggering: where it takes a minimum of 13,500 liters of water to produce a kilo of beef (the number taking into account the water used to produce the animal's feed as well as its own consumption), only a few (between one and eight, depending on the source) will offer an insect steak of the same weight.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">The \u00abbut\u00bb we avoid saying<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Chanter la gloire des insectes, oui, sans oublier pour autant qu\u2019ils pr\u00e9sentent de r\u00e9els risques pour l\u2019homme. Tout d\u2019abord et comme pour n\u2019importe quelle denr\u00e9e alimentaire, il y a des risques sanitaires qui se doivent d\u2019\u00eatre connus, qu\u2019il est indispensable de savoir contr\u00f4ler par une mise en place de r\u00e8gles strictes. Les principaux dangers de l\u2019\u00e9levage d\u2019insectes et de vers sont phyisques (c&rsquo;est-\u00e0-dire que certaines parties des petites b\u00eates pourraient \u00eatre mal dig\u00e9r\u00e9es voire \u00abcass\u00e9es\u00bb, comme le dard ou la rostre), chimiques bien s\u00fbr, par les pesticides ou polluants organiques qui pourraient contaminer la culture ou encore aux conditions d\u2019\u00e9levage et de production (empaquetage, p\u00e9riode de vie de l\u2019aliment). Les adeptes entomophages devront \u00e9galement donner une attention particuli\u00e8re aux allerg\u00e8nes communs de l\u2019ensemble des esp\u00e8ces arthropodes tels que mollusques, crustac\u00e9s ou acariens.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In the climate of environmental urgency that has prevailed for decades, many initiatives have been possible. Entomophagy is one of them, and the question deserves to be treated with care, as far away as possible from conventions, formidable barriers to change. Perhaps this time, Switzerland will have been the forerunner of a new regime, and it's certain that the small country will have raised the necessary question of a possible openness of mind... and
