Presentation and tasting in an (almost) summery mood.<\/strong><\/p>\n<p><!--more--><\/p>\n<p>Nich\u00e9e \u00e0 Vuisternens-devant-Romont, dans la Gl\u00e2ne fribourgeoise, la Brasserie du Dz\u00f4 tient son nom atypique du patois propre \u00e0 ses contr\u00e9es d\u2019origine. En effet, la tradition catholique du canton a orient\u00e9 de nombreux parents vers des pr\u00e9noms bibliques, dont \u00ab\u00a0Joseph\u00a0\u00bb, pr\u00e9nom qui, en patois fribourgeois, se prononce \u00ab\u00a0Dzoj\u00e8\u00a0\u00bb, diminu\u00e9 en \u00ab\u00a0Dz\u00f4\u00a0\u00bb. Aujourd\u2019hui, ce terme typique est encore souvent utilis\u00e9 par les cantons voisins pour d\u00e9signer les habitants de Fribourg.<\/p>\n<p>Le patrimoine r\u00e9gional et l\u2019amour du terroir se trouvent donc au centre de la philosophie de la brasserie. Celle-ci est la concr\u00e9tisation du r\u00eave de son propri\u00e9taire, fondateur et ma\u00eetre-brasseur Laurent Michel, optom\u00e9triste de formation, qui ouvre la Brasserie du Dz\u00f4 d\u00e9but 2016, apr\u00e8s avoir acquis et install\u00e9 lui-m\u00eame le mat\u00e9riel de brassage. La brasserie, r\u00e9solument orient\u00e9e local, commence n\u00e9anmoins \u00e0 se faire conna\u00eetre dans le reste de la Suisse romande, notamment gr\u00e2ce \u00e0 l\u2019originalit\u00e9 de ses bi\u00e8res, \u00e0 la fois le fruit de l\u2019innovation technologique et de traditions s\u00e9culaires. \u00ab Cr\u00e9er des recettes originales, procurer du plaisir et transmettre notre passion\u00a0\u00bb est d\u2019ailleurs le cr\u00e9do de la maison.<\/p>\n<p>Venons-en \u00e0 pr\u00e9sent au\u00a0c\u0153ur de notre sujet, n\u2019en d\u00e9plaise \u00e0 notre foie : les bi\u00e8res produites sur place. A l\u2019image du nom de la brasserie, leurs noms ont tous \u00e9t\u00e9 inspir\u00e9s par le patois local. La premi\u00e8re \u00e0 faire fr\u00e9mir nos papilles est la Rupite (tir\u00e9 du patois <em>d\u00e8rupito<\/em> qui signifie \u00ab forte pente\u00a0\u00bb), bi\u00e8re blanche de style am\u00e9ricain qui combine habilement plusieurs sortes de houblons\u00a0avec le froment, lui conf\u00e9rant un go\u00fbt r\u00e9solument rafra\u00eechissant, avec une amertume plut\u00f4t courte en bouche, mais un go\u00fbt de c\u00e9r\u00e9ales et d\u2019agrumes aussi persistant qu\u2019agr\u00e9able.<\/p>\n<p>S\u2019ensuit la Chenaye, soit \u00ab\u00a0cloche\u00a0\u00bb en parl\u00e9 local. D\u00e9finie comme \u00ab\u00a0une pale ale saisonni\u00e8re de style belge\u00a0\u00bb, elle se profile comme la parfaite bi\u00e8re d\u2019ap\u00e9ritif, ses notes de mandarine et de poivre vert lui conf\u00e9rant un grand pouvoir d\u00e9salt\u00e9rant. Les houblons germaniques utilis\u00e9s pour son brassage rehaussent quant \u00e0 eux l\u2019amertume franche et fra\u00eeche propre \u00e0 ce type de bi\u00e8re.<\/p>\n<p>La Tint\u00e9bin (\u00ab\u00a0Tiens-toi bien\u00a0\u00bb pour les intimes), premi\u00e8re bi\u00e8re produite \u00e0 la brasserie du Dz\u00f4, affiche un profil bien diff\u00e9rent de celui des deux pr\u00e9c\u00e9dentes. Il s\u2019agit d\u2019une bi\u00e8re rousse fa\u00e7on irlandaise, dans laquelle le houblon se fait cette fois-ci discret au profit du malt. L\u2019amertume est donc l\u00e9g\u00e8re, et elle r\u00e9v\u00e8le une bouche plut\u00f4t douce et moelleuse, qui en fait une \u00ab\u00a0Ale\u00a0\u00bb tr\u00e8s accessible aux profanes du genre. Fid\u00e8le aux traditions brassicoles britanniques, sa mousse est plut\u00f4t courte et menue.<\/p>\n<p>Enfin, non sans une certaine curiosit\u00e9, nous entamons la Cramine (du patois <em>kramena<\/em>, qui signifie \u00ab\u00a0froid vif\u00a0\u00bb), bi\u00e8re atypique aux influences germaniques marqu\u00e9es. Bi\u00e8re noire de caract\u00e8re, la Cramine se distingue par des notes de r\u00e9glisse et de figue provenant des malts allemands, tandis que les malts torr\u00e9fi\u00e9s lui conf\u00e8rent des relents de cacao et de caf\u00e9. A la fois douce et complexe, elle se pr\u00eatera aussi bien \u00e0 l\u2019ap\u00e9ritif qu\u2019\u00e0 l\u2019accompagnement de plats chauds.<\/p>\n<p>En plus des pr\u00e9c\u00e9dentes bi\u00e8res, la brasserie produit \u00e9galement des triples de type belge ainsi que d\u2019autres classiques brassicoles, mais aussi de nouvelles cr\u00e9ations originales, \u00e0 l\u2019inspiration sans limite.
