Bien avant le go\u00fbt, c\u2019est donc le sens du toucher qui sert de liaison entre la boisson houblonn\u00e9e et nos \u00e9motions. L\u2019essence de la bi\u00e8re se comprend de mani\u00e8re \u00e9minemment sensuelle, voire \u00e9rotique. Qui le nierait apr\u00e8s avoir fait cette exp\u00e9rience si universelle de la chope bien fra\u00eeche au terme d\u2019une apr\u00e8s-midi de chaleur estivale, dans l\u2019odeur des premi\u00e8res merguez de la soir\u00e9e?<\/p>\n\n\n\n<!--more Lire la suite de l'article-->\n\n\n\n<p>Mais attention, ce c\u00f4t\u00e9 beauf de la bi\u00e8re&nbsp;\u2013 et nous avons tous notre c\u00f4t\u00e9 beauf&nbsp;\u2013 s\u2019est vu sublim\u00e9 il y a quelques ann\u00e9es par une dimension plus noble, redonnant \u00e0 cette vieille boisson toute la puissance gastronomique qui l\u2019avait jadis caract\u00e9ris\u00e9e. Oui, pardi, il est possible de boire autre chose qu\u2019une Carlsberg ou qu\u2019une Heineken. Fini, le r\u00e8gne de la bi\u00e8re pression que l\u2019on boit bon gr\u00e9, mal gr\u00e9. A pr\u00e9sent, il faut commander du vrai, du go\u00fbt.<\/p>\n\n\n\n\n\n<p>Bien avant que l\u2019industrie ne se d\u00e9ploie et nivelle par le bas la saveur des bi\u00e8res, la Suisse comptait une culture brassicole ancr\u00e9e localement. Le pays conna\u00eet aujourd\u2019hui une revitalisation de ce savoir-faire helv\u00e9tique, moins sous forme d\u2019h\u00e9ritage que de mouvement inspir\u00e9 de recettes et de modes de fabrication internationaux. Les brasseurs d\u2019aujourd\u2019hui ont entre la vingtaine et la quarantaine, ils se v\u00eatissent en mode <em>hipster&nbsp;<\/em>et sont avant tout des passionn\u00e9s, se lan\u00e7ant dans une aventure mousseuse dont ils n\u2019esp\u00e8rent pas forc\u00e9ment tirer un profit financier.<\/p>\n\n\n\n<p>L\u2019ampleur de ce ph\u00e9nom\u00e8ne n\u2019est pas marginale, elle est unique au monde. Bien que la France, la Belgique, l\u2019Allemagne, le Canada ou les Etats-Unis observent \u00e9galement une apparition de nombreuses brasseries artisanales depuis les ann\u00e9es 1990 en moyenne, la Suisse repr\u00e9sente la pays qui poss\u00e8de <a href=\"https:\/\/houseofswitzerland.org\/fr\/swissstories\/histoire\/le-boom-des-bieres-artisanales-suisses\">le plus grand nombre de microbrasseries par habitant au monde <\/a>(409 brasseries&nbsp;en 2013). Ce record est d\u00fb notamment \u00e0 la clairvoyance et \u00e0 l\u2019anticipation du Conseil f\u00e9d\u00e9ral, qui a vu dans cette \u00e9mergence de nouvelles brasseries locales un potentiel \u00e9conomique int\u00e9ressant et a ainsi assoupli la l\u00e9gislation pour favoriser le d\u00e9veloppement des microbrasseries.<\/p>\n\n\n\n\n\n<p>Il faut dire aussi que les Suisses poss\u00e8dent une mentalit\u00e9 entrepreneuriale, ce qui explique que beaucoup de jeunes adultes se lancent dans ce genre d\u2019entreprises alors que les difficult\u00e9s pour percer dans le domaine sont l\u00e9gion. Puisqu\u2019il s\u2019agit souvent d\u2019une passion, nous comprenons \u00e9galement cet essor en songeant \u00e0 quel point les conditions de vie du pays, l\u2019aisance \u00e9conomique et sociale des habitants, la s\u00e9curit\u00e9, le syst\u00e8me de formation, permettent l\u2019\u00e9panouissement d\u2019une telle activit\u00e9. La Suisse, et notamment sa partie al\u00e9manique, est aussi \u00e0 la pointe en mati\u00e8re d\u2019agriculture bio, ce qui contribue \u00e0 l\u2019attrait des gens pour des produits locaux et \u00e9cologiques.<\/p>\n\n\n\n<p>Les cons\u00e9quences d\u2019un tel foisonnement dans le domaine des bi\u00e8res artisanales sont r\u00e9jouissantes; et ce, sous plusieurs angles. D\u2019abord, et ce fait peut para\u00eetre surprenant, &nbsp;la consommation de bi\u00e8re par habitant a baiss\u00e9, passant de 71 litres \u00e0 1990 \u00e0 environ 57 litres en 2009. La qualit\u00e9 semble donc prendre le dessus sur la quantit\u00e9, <a href=\"http:\/\/www.swissinfo.ch\/fre\/malgr\u00e9-l-oligopole--les-micro-brasseries-font-des-bulles\/165094\">selon Laurent Mousson<\/a>.
