Founded in 1997 in Saignel\u00e9gier, the BFM has never ceased to develop distinctive, original beers, alongside a rich and often unusual program of events. July 14, 2018 follows in this footsteps, with a groundbreaking event dubbed \u00abSaint Bon-Chien &amp; Friends\u2019: 1st Sour Ale Congregation\u00bb.<\/span><\/p>\n\n\n\n<!--more-->\n\n\n\n<p class=\"Corps\"><span lang=\"FR\">Cet \u00e9v\u00e9nement atypique tire son nom d\u2019une des plus c\u00e9l\u00e8bres cr\u00e9ations de la Brasserie des Franches-Montagnes: la Saint Bon-Chien. Cette derni\u00e8re tire son nom de l\u2019embl\u00e9matique mascotte de la brasserie, un chat nomm\u00e9 Bon-Chien. Sanctifi\u00e9 \u00e0 sa mort, il devient Saint Bon-Chien et inspire la cr\u00e9ation de celle qui conna\u00eetra plus tard un succ\u00e8s international et deviendra l\u2019ambassadrice attitr\u00e9e de ses cr\u00e9ateurs: la bi\u00e8re acidul\u00e9e Saint Bon-Chien. Cette derni\u00e8re est une bi\u00e8re de fermentation mixte pr\u00e9sentant une robe rouge-ambr\u00e9e et un haut taux d\u2019acidit\u00e9. Elle a \u00e9galement la particularit\u00e9 d\u2019\u00eatre m\u00fbrie pendant un an dans des f\u00fbts de ch\u00eane ayant contenu du vin rouge. Tr\u00e8s aromatique, assez acide et complexe, elle semble s\u2019adresser, <em>a priori<\/em>, \u00e0 un public sp\u00e9cifique et averti. Elle connait n\u00e9anmoins un grand succ\u00e8s international et se pr\u00e9sente comme le fer de lance de la marque.<\/span><\/p>\n\n\n\n<p class=\"Corps\"><span lang=\"FR\">En effet, la Saint Bon-Chien s\u2019inspire fortement des bi\u00e8res de tradition belge dites acides, ou lambics. Ce type de bi\u00e8re, tr\u00e8s ancien et pourtant m\u00e9connu, utilise la technique de le fermentation spontan\u00e9e: laiss\u00e9es \u00e0 l\u2019air libre, dans des conditions d\u2019humidit\u00e9 et de temp\u00e9rature tr\u00e8s sp\u00e9cifiques, le brassin d\u00e9veloppe des levures naturelles qui viennent, petit \u00e0 petit, coloniser les cuves et transformer les sucres en alcool et en gaz carbonique. Ce processus, pleinement naturel, n\u00e9cessite donc du temps et des conditions climatiques optimales. Compl\u00e8tement tributaire des conditions m\u00e9t\u00e9orologiques, cette m\u00e9thode de fermentation est donc rest\u00e9e minoritaire, voire confidentielle au fil des si\u00e8cles. Le r\u00e9sultat est g\u00e9n\u00e9ralement une bi\u00e8re tr\u00e8s typ\u00e9e et r\u00e9solument acide, avec peu de gaz carbonique et un taux d\u2019alcool mod\u00e9r\u00e9. <\/span><\/p>\n\n\n\n<p class=\"Corps\"><span lang=\"FR\">La Brasserie des Franches-Montagnes a donc pris le pari os\u00e9 de d\u00e9dier un \u00e9v\u00e9nement \u00e0 ce type de bi\u00e8re si particulier. Et force est de constater que la BFM a mis les petits plats dans les grands, avec pas moins de vingt-et-un brasseries invit\u00e9es et venant de huit pays diff\u00e9rents, dont les Etats-Unis, les Pays-Bas, la Norv\u00e8ge, l\u2019Italie et l\u2019incontournable Belgique. Plus de vingt-cinq bi\u00e8res \u00e0 la pression y sont propos\u00e9es, ainsi que la possibilit\u00e9 de d\u00e9guster de nombreuses bi\u00e8res rares et \u00e9tonnantes, et de converser avec les nombreux brasseurs sur place. La brasserie se remplit au fil de l\u2019apr\u00e8s-midi, et producteurs, connaisseurs, restaurateurs et curieux d\u00e9gustent et \u00e9changent dans la bonne humeur et le parfum du houblon, sans retenue li\u00e9e aux diff\u00e9rences linguistiques. Le cadre fantastique offert par la BFM contribue \u00e9galement \u00e0 l\u2019ambiance agr\u00e9able des lieux et pousse \u00e0 la d\u00e9couverte de bi\u00e8res sans cesse plus originales: lambic blanche \u00e0 l\u2019abricot, bi\u00e8re ferment\u00e9e en f\u00fbts de grappa, bi\u00e8re brass\u00e9e avec du vin rouge et de la myrtille ou encore m\u00e9lange audacieux de lambic et d\u2019IPA.<\/span><\/p>\n\n\n\n<p><span lang=\"FR\">La cr\u00e9ativit\u00e9 des brasseurs semble n\u2019avoir aucune limite, et la Brasserie des Franches-Montagnes rend un hommage retentissant au d\u00e9funt f\u00e9lin Bon-Chien, qui aurait sans doute donn\u00e9 le point d\u2019orgue de la manifestation avec l\u2019un de ses c\u00e9l\u00e8bres miaulements
