La bi\u00e8re artisanale en fait probablement partie, et c\u2019est pourquoi je voulais aujourd\u2019hui revenir aux fondamentaux de ce qui fait cette chronique dans un petit point technique, en \u00e9tant le plus complet possible sans \u00eatre exhaustif. La bi\u00e8re: d\u00e9finition.<\/strong><\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Une bi\u00e8re, ce sont d\u2019abord ces ingr\u00e9dients: du houblon, du malt, des levures et bien s\u00fbr de l\u2019eau. Le houblon est une plante de la m\u00eame famille que le cannabis, utilis\u00e9e pour ses propri\u00e9t\u00e9s aromatiques, am\u00e9risantes et antibact\u00e9riennes. Le malt repr\u00e9sente la principale source de sucres (certains sucres compl\u00e9mentaires sont parfois ajout\u00e9s durant le processus de brassage) et il est obtenu par maltage de plusieurs c\u00e9r\u00e9ales: l\u2019orge, le bl\u00e9 ou le seigle. Le maltage consiste \u00e0 faire germer la c\u00e9r\u00e9ale et la cuire lors d&#8217;une phase de touraillage. Plus le malt est torr\u00e9fi\u00e9, plus il donnera un caract\u00e8re prononc\u00e9 au breuvage final, mais moins il produira de sucres fermentescibles. Les levures sont utilis\u00e9es afin de dig\u00e9rer et transformer les sucres fermentescibles du malt en alcool (g\u00e9n\u00e9ralement du genre saccharomyces, mais les brettanomyces gagnent en popularit\u00e9 pour le go\u00fbt acidul\u00e9 qu\u2019elles engendrent). Ce sont les ing\u00e9nieurs microscopiques sans lesquels rien de tout cela ne serait possible.<\/p>\n\n\n\n<p>Le brasseur joue g\u00e9n\u00e9ralement sur l\u2019\u00e9quilibrage et les combinaisons de houblons et de malts afin de donner un ar\u00f4me unique \u00e0 sa cr\u00e9ation. D\u2019autres ingr\u00e9dients peuvent entrer dans le m\u00e9lange afin de travailler et d\u2019enrichir le go\u00fbt, comme des fruits, des baies, des fleurs, des \u00e9pices, etc. Ces ingr\u00e9dients peuvent varier en forme et en nombre, et c\u2019est de la multitude de processus de brassage et de combinaisons que na\u00eet l\u2019immense diversit\u00e9 de bi\u00e8res aujourd\u2019hui sur le march\u00e9. Mais sans l\u2019impulsion donn\u00e9e par les microbrasseries dans les ann\u00e9es septante en Am\u00e9rique du Nord, nous n\u2019aurions probablement pas acc\u00e8s \u00e0 autant de vari\u00e9t\u00e9s.<\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Les techniques<\/strong> from <strong>brassage<\/strong><\/h2>\n\n\n\n<p>G\u00e9n\u00e9ralement, le brassage consiste en des \u00e9tapes successives d\u2019emp\u00e2tage et lavage des dr\u00eaches, \u00e9bullition du mo\u00fbt obtenu et refroidissement, fermentation, et mise en bouteille. Une pratique courante aujourd\u2019hui, chez certains brasseurs d\u2019<em>IPA<\/em> (India Pale Ale) notamment, consiste \u00e0 rajouter du houblon \u00e0 froid afin d\u2019augmenter le pouvoir aromatique de celui-ci. Dans certaines caves bruxelloises, les levures en suspension font partie du d\u00e9cor et viennent fermenter le mo\u00fbt directement sans intervention humaine &#8211; on parle alors de fermentation spontan\u00e9e.<\/p>\n\n\n\n<p>Il existe autant de techniques que de styles de bi\u00e8re, ainsi nous ne nous \u00e9pancherons pas sur cette prodigieuse diversit\u00e9. N\u00e9anmoins, si votre int\u00e9r\u00eat dans ce domaine est r\u00e9cent, il est au minimum important de distinguer deux processus en fonction de la temp\u00e9rature: la fermentation basse (id\u00e9alement entre 10 et 15\u00b0C, proc\u00e9d\u00e9 \u00e0 la base des <em>lagers<\/em> et principalement industrialis\u00e9) et la fermentation haute (id\u00e9alement entre 18 et 21\u00b0C, proc\u00e9d\u00e9 \u00e0 la base des <em>ales<\/em> et plus largement r\u00e9pandu dans la communaut\u00e9 des brasseurs amateurs).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Vers la fin<\/strong> from <strong>monopole<\/strong> from <strong>bi\u00e8res<\/strong> industrielles<\/h2>\n\n\n\n<p>Le proc\u00e9d\u00e9 de base, s\u2019il requiert au moins quelques comp\u00e9tences techniques de base et une rigueur quant \u00e0 l\u2019hygi\u00e8ne, s\u2019apparente \u00e0 de la cuisine. En t\u00e9moigne le nombre de brasseries artisanales qui a explos\u00e9 ces derni\u00e8res ann\u00e9es gr\u00e2ce aux kits et fait na\u00eetre des vocations chez certains <em>home brewers<\/em>. Plus de mille brasseries en Suisse (qui d\u00e9tient le record mondial du plus grand nombre de brasseries par habitant) sont au compteur actuellement, et la tendance est \u00e0 la hausse partout dans le monde. Les chiffres sont cependant \u00e0 mettre en perspective avec ceux qui peuvent r\u00e9ellement vivre de leur art, et ceux qui brassent comme hobby les dimanches apr\u00e8s-midi dans leur garage. Moins d&#8217;une cinquantaine de brasseries seraient \u00e0 l&#8217;heure actuelle rentables en Suisse.<\/p>\n\n\n\n\n\n<p>Depuis l\u2019invention de la bi\u00e8re moderne au Moyen Age, un sacr\u00e9 bout de chemin a \u00e9t\u00e9 parcouru, et la domination des grandes brasseries industrielles au XX<sup>th<\/sup> si\u00e8cle semble s\u2019effacer lentement au profit du brassage amateur. La bi\u00e8re tend \u00e0 gagner ses lettres de noblesses, notamment face au vin, qui dans nos r\u00e9gions est toujours le roi des boissons alcoolis\u00e9es et fait partie int\u00e9grante de notre patrimoine. Cependant, la vieille industrie ne se laisse pas faire et gangr\u00e8ne le mouvement <em>craft<\/em> \u00e0 coup de rachats et de lancements sur le march\u00e9 de ses propres \u00abbi\u00e8res artisanales\u00bb. Mais alors, c\u2019est quoi, une bi\u00e8re artisanale?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A <strong>bi\u00e8re<\/strong> <strong>artisanale<\/strong>, c\u2019est quoi?<\/h2>\n\n\n\n<p>La d\u00e9finition est vague et difficile \u00e0 cerner, et fait toujours d\u00e9bat au sein de la communaut\u00e9. Globalement, on consid\u00e8re qu\u2019une bi\u00e8re est artisanale si elle provient d\u2019une brasserie ind\u00e9pendante, c\u2019est-\u00e0-dire fonctionnant en autonomie par rapport aux grands groupes brassicoles multinationaux comme Heineken ou AB Inbev. A cette notion purement \u00e9conomique s\u2019oppose parfois celle de l\u2019\u00e9chelle (\u00e0 partir de combien de litres brass\u00e9s ou d\u2019employ\u00e9s une brasserie devient-elle trop grande pour \u00eatre consid\u00e9r\u00e9e comme \u00abcraft\u00bb?), avec sa galaxie de termes grecs comme microbrasserie, nanobrasserie, picobrasserie et j\u2019en passe.<\/p>\n\n\n\n<p><strong>Read also | <a href=\"https:\/\/leregardlibre.com\/en\/gastronomy\/craft-beer-a-phenomenon-of-fashion-but-also-of-taste\/\">Craft beer, a phenomenon of fashion, but also of taste<\/a><\/strong><\/p>\n\n\n\n<p>L\u2019important n\u2019est peut-\u00eatre pas dans la d\u00e9finition en soi, mais dans l\u2019intention derri\u00e8re la production et le rapport entre le brasseur et sa bi\u00e8re. Si la bi\u00e8re que vous buvez a \u00e9t\u00e9 appr\u00e9hend\u00e9e comme une cr\u00e9ation relevant de l\u2019artistique, et pas comme un produit de consommation \u00e0 but uniquement lucratif, vous avez de grandes chances de boire une bi\u00e8re artisanale.
