Et non pas de vin. Ce changement de pratique s&#8217;explique ais\u00e9ment par le ph\u00e9nom\u00e8ne des bi\u00e8res artisanales, que nous avons voulu prendre au s\u00e9rieux en vous en parlant chaque vendredi. Loin de concurrencer le vin, la bi\u00e8re a elle aussi des vertus gastronomiques. Elle pr\u00e9sente d\u00e9j\u00e0 une qualit\u00e9 qui la rend compl\u00e9mentaire \u00e0 celui-ci: tout comme le champagne, la bi\u00e8re est une boisson gazeuse. Or, les bulles changent drastiquement la fa\u00e7on d&#8217;appr\u00e9cier une truite fum\u00e9e, par exemple. Autre caract\u00e9ristique \u00e9vidente: l&#8217;amertume, quasi-absente du vin.<\/p>\n\n\n\n<p>Le jeu des contrastes au royaume des go\u00fbts se retrouve donc renforc\u00e9 par l&#8217;arriv\u00e9e d&#8217;une nouvelle venue. Autrefois r\u00e9serv\u00e9e \u00e0 l&#8217;activit\u00e9 de la picole, puis accept\u00e9e \u00e0 l&#8217;ap\u00e9ritif au point d&#8217;en devenir l&#8217;invit\u00e9e favorite, la dive boisson houblonn\u00e9e a subi pour notre plus grand bonheur un processus de d\u00e9beaufisation. Jadis plouc, aujourd&#8217;hui chic, la bi\u00e8re ne doit cependant pas faire le jeu d&#8217;une \u00e9lite branch\u00e9e qui ne jure que par la nouveaut\u00e9.
