Honestly a good guy. A simple guy; welcoming, generous. Lionel Avanthay has his head in the clouds as he ponders the ecology and agriculture of tomorrow. But he has his feet firmly on the ground, and his hands too. Having become a farmer in 2016 in the convents of the Fribourg region, he now devotes himself to his passion: pasta. Pasta that he produces himself and sells with growing success. Meet this philosophical young businessman in an idyllic garden, where the birds sing.

Le Regard Libre: Where did your project for ecology and local pasta production come from?

Lionel Avanthay: The project grew out of my faith. As a Christian, I went to mass every Sunday and prayed for the whole world. But my love of the table, with its good food and fine wines, led me to the project.
